I spent this past weekend at home with my family. When I come home, my dad likes to try out new recipes with me. I'm always a little surprised by how many he can find. He's a vegetarian in America. This weekend we tried a Thai noodle dish with peanut sauce and the prettiest vegetables on the planet, the bell pepper.
Oh yeah and some carrots and mushrooms and jalapenos. The great thing about vegetables is that they're all so colorful.
It turned out really well. We ended up adding some soy sauce to the peanut sauce, though. We couldn't resist--we're Chinese at heart.
